Baked Salmon with Avocado Salsa

This low carb and high protein meal is perfect for a day when you don’t want to stuck in the kitchen for hours. Just preheat the oven and line up a baking sheet with aluminum foil for a quick clean up too!

This recipe uses salmon which is a great source of omega-3 and vitamin D, also known as the sunshine vitamin. Many of us don’t get enough sunshine half the year when it's dark and cold so making this meal a great option for lunch and dinner! This recipe includes a variety of spices that bring out the best flavors of the fish and avocado pairing. Your taste buds will be delighted by the tender texture of the baked salmon along with the creamy flavor of the avocado salsa. Baked Salmon and Avocado Salsa recipe

Serves 2

Cook Time 12 min

Ingredients

1 tbsp. olive oil​

1 clove garlic, minced​

½ tsp. chili powder​

½ tsp. ground cumin​

½ tsp. onion powder​

¼ tsp. black pepper​

¼ tsp. salt​

2x 6 oz. (170g) salmon filets​

For the avocado salsa:​

1 ripe avocado, pitted & diced​

1 tomato diced​

2 tbsp. onion diced​

2 tbsp. cilantro, minced​

1 tbsp. olive oil​

1 tbsp. lime juice​

salt & pepper to taste

Directions

Heat the oven to 400°F (200°C). Line a baking sheet with aluminum foil.​

Place the olive oil, garlic and spices into a small bowl, mix well to combine then brush over the salmon filets.​

Lay the salmon on the baking sheet and place into the hot oven to bake for 12-15 minutes or until cooked through.​

In the meantime, make the avocado salsa. Place the avocado, tomato, onion, and cilantro into a large mixing bowl. Drizzle with the olive oil, fresh lime juice and season with a pinch of salt and pepper. Mix well and set aside until ready to serve.​

Top the salmon with avocado salsa and serve immediately.
