Zucchini Pizza Bites

We do love pizza within the Realiz100 Membership and are always excited to see different ways our team and members include pizza within their food pillar. These zucchini pizza bites are a great low carb way to enjoy your favorite pizza toppings! They also make a great appetizer or after school snack that are big on flavor and low on carbs. We love simple and tasty low carb recipes that come together quickly and fit easily into the food pillar within your Target100 weight loss program.

The recipe below provides a template for a tomato and cheese pizza. You can easily add some chopped pepperoni, crumbled sausage, or chopped bell pepper for a boost in protein or fiber. Zucchini Pizza Bites recipe

Serves: 6

Prep Time: 10 mins

Cook Time: 10 mins

Ingredients

2 large zucchinis

½ cup (120ml) tomato sauce​

1 tsp. dried oregano​

1 cup (225g) mozzarella cheese, shredded​

4 tbsp. parmesan cheese, grated

Directions

Preheat the oven to 430°F (220°C). Line a baking sheet with baking paper.​

Cut the zucchini into ¼ inch thick slices and arrange on the baking sheet. Top the zucchini slices with the tomato sauce, oregano, and cheese.​

Place the baking sheet into the oven and bake for 5-7 minutes or until the zucchini is tender. Then broil the zucchini for 5 minutes, or until the cheese has melted.

Nutrition Facts: One serving contains 9 grams of carbohydrates, 18 grams of protein, and 3 grams of fiber.
